(All grains should be soaked for at least 8 hours but preferably overnight to deactivate enzyme inhibitors, making them easier to digest.)

amaranth, buckwheat (kasha), millet, quinoa, soba noodles (buckwheat), starchy vegetables (yams, sweet potatoes, squash)

acceptable grains & starches:

beans (all varieties), black-eyed peas, brown & wild rice, chickpeas, gluten-free pastas & other foods & lentils

grains to avoid:

processed & refined starches & sugars, rye & barley, wheat & wheat products, white rice
