legumes & beans


They are an inexpensive protein source great for transitioning your diet.  They are high in protein & minerals.  Interestingly, they are both a starch & a protein.  Some people call them “nature’s oops” but I personally don’t think anything is accidental in nature.  Being both makes them harder to digest & can cause gas & bloating, hence the song, “Beans, beans the magical fruit…the more you eat the more you toot.”  They area great source of fiber but they should also be eaten late in the day as they are heavier.  Sprouting them (again, YouTube is lovely for the how-to’s) makes them much easier to digest.  Click here to get a list of the best legumes & beans
